Thai Peanut Chicken Pizza

2 Naan flatbreads (a gluten-free recipe is here)

6oz Piquant Peanut sauce

2 cooked chicken breasts, either small-diced or shredded

1 cup shredded mozzarella cheese

4 green onions, sliced diagonally

1/2 cup shredded carrots
-
1/2 cup thinly sliced red onion

1/2 cups thinly sliced red pepper
-
1/2 cup chopped cilantro
-
1/2 cup chopped roasted peanuts (optional)

1/2 fresh lime (optional)
Directions

Heat oven to 400º

Toss chicken with ~2oz Piquant Peanut sauce

Spread the remaining sauce evenly over the flatbreads (you may need more or less, depending on the size of your flatbreads)

*TIP* Warm the sauce first to make it easier to spread!

Sprinkle chicken evenly over the flatbreads, making sure to reach the edges; follow with cheese and then green onions, carrots, onion, and red pepper.

Place in the oven for ~10 minutes, until the cheese has melted and the ingredients have warmed.

Remove from the oven, top with cilantro (and roasted peanuts if desired). For best taste, squeeze some fresh lime on top!
