Summerall Salad


  • Baby spinach

  • Olive oil

  • Roasted sweet potato

  • Kerneled corn

  • Garbanzo beans (rinsed and drained)

  • Dried cranberries

  • Chopped avocado

  • Pepitos

  • Brown rice (optional)

  • Fresh lime

  • Chef Sherri Sauces - Herbed Cranberry Fig


  1. Clean, dice, and roast your sweet potato

    • For tips on roasting, click here

  2. Tear off the long stems, if any, off of the baby spinach leaves and toss with a little olive oil

  3. Place spinach in a bowl and then top with all of the ingredients above, except the lime

  4. Drizzle the Herbed Cranberry Fig sauce onto the salad; if desired, you can mix it first with a healthy oil to thin it out

  5. Lastly, slice the lime into wedges and either serve with them on the side or go ahead and squeeze the fresh juice on top!
