Baby spinach

Olive oil

Roasted sweet potato

Garbanzo beans (rinsed and drained)

Dried cranberries

Chopped avocado

Pepitos

Brown rice (optional)

Directions

Clean, dice, and roast your sweet potato

Tear off the long stems, if any, off of the baby spinach leaves and toss with a little olive oil
-
Place spinach in a bowl and then top with all of the ingredients above, except the lime
-
Drizzle the Herbed Cranberry Fig sauce onto the salad; if desired, you can mix it first with a healthy oil to thin it out
-
Lastly, slice the lime into wedges and either serve with them on the side or go ahead and squeeze the fresh juice on top!
