Easy BBQ Meatloaf


  • 1lb lean ground beef

  • 1 cup quick or old-fashioned oats or bread crumbs

  • 1 egg

  • 3/4 cup Smoky Brisket (for a more peppery flavor) or Bourbon BBQ (for a more tangy flavor) sauce, divided

  • Optional: 1/2 cup diced onions


  1. Heat oven to 350º

  2. In a bowl, thoroughly combine all of the ingredients, but use only 1/4 cup of the sauce

  3. Place the mixture in a 1lb loaf pan and cook for ~30 minutes (until the internal temp reaches 150º)

  4. Remove from the oven, top the loaf with the remaining sauce, and place back in the oven for 5-10 minutes (until the internal temp reaches 160º)

  5. Remove from oven, let sit for 5 minutes, slice, and serve with additional sauce if desired (that's how I like it!)
