Brisket Chicken Mini Pizzas

  • 1 pound unseasoned chicken, cooked as desired (grilled, baked, etc.)

  • 1 cup chopped onions

  • 2T butter

  • 1.5 cups mozzarella cheese

  • 4 plain sandwich rolls

  • ~6oz Smoky Brisket Sauce

  1. Preheat oven to 425º and melt butter in a skillet

  2. Once butter has melted, add the onions to the skillet and cook until browned, stirring occasionally

  3. While the onions are cooking, small dice or shred your chicken and mix in enough Smoky Brisket sauce to coat it well

  4. Cut the rolls in half (if you eat gluten-free, I recommend the Against the Grain brand, original flavor)

  5. Spread a light coating of brisket sauce on the bun tops and add grilled onions

  6. Spoon on the brisket chicken, level out, and top with mozzarella cheese

  7. Cook for ~12 minutes until cheese begins to brown on top

  8. Serve and enjoy!
